Who loves chips and salsa??

Well, this girl sure does!! I adore Mexican food…it’s pretty much my favorite.

We just got home from spring break in Houston, Texas and ate at this amazing Mexican restaurant with the best salsa!! Read about our fun trip HERE.

So…Cinco de Mayo is just a few days away! I guess that means I better get busy, right?? Homemade salsa is actually quite simple. Throw a bunch of fresh ingredients in your food processor or blender and voila! I’m going to stop you here though. If you are accustomed to jarred salsa, this has a very different flavor and you may not like it! My recommendation might be to start with half canned tomatoes and half fresh if you don’t love the taste of fresh tomatoes.  But if you love fresh homemade salsa…try this recipe!Homemade salsa

Salsa is super fun because you can definitely mix it up if you want more heat, then add more jalapeno. If you want more spice, add more cumin or some chili powder. Taylor it to your taste and what you like…that’s the beauty of homemade salsa! I like a little bit of cilantro, but my mother would add an entire bunch if I let her!

Just a couple of notes to watch out for. Do not overmix, blend, process the salsa. It will turn into soup and yeah well…it won’t be good. I have chop and stir setting on my blender. I only chopped 3-4 times and used the stir function the rest of the time. Also, be careful to wash your hands after chopping the jalapeno…don’t want that ruining your day! Other than that, toss all those ingredients in your blender or food processor and Enjoy!

Homemade Salsa

Ingredients

  • 3 Tomatoes chopped
  • 3 jalapenos chopped & seeded
  • 1/2 medium sized onion chopped
  • 3 garlic cloves (or 1 Tablespoon minced garlic)
  • 1-2 tablespoon double concentrated tomato paste
  • 1/4-1/2 cup cilantro
  • 1 1/2 teaspoon cumin
  • salt and pepper to taste
  • juice from one small lemon
  • juice from one small lime

Instructions

  1. Give the tomatoes, jalapenos, and onion all a rough chop. Seed the jalapenos unless you like it HOT! Toss all ingredients in a blende or food processor. My blender has a chop and stir setting which is what I use. Do not over mix or you salsa will turn out soupy. I like to chill my salsa to let the flavors develop for at least an hour.

  4. YUM! we’re not having a cinco de mayo celebration, instead we’re celebrating the kentucky derby with a party at home! why not bend the two occasions!? personally i love a nice, chunky salsa… but my husband loves smooth salsa like this — i’m going to have to make both!
